Old Millbank Smokehouse, a cherished local institution for 30 years, was passed on to Dillon Organics in 2023. Dillon Organics, a longtime customer and passionate advocate for organic products, has taken over the reins under the leadership of James Dillon. With his dedication to organic practices, we’re confident that Old Millbank salmon will continue to thrive for many years to come.

Our History

Our Story

Founded by Geraldine Bass in 1990, Old Millbank Smokehouse in Buttevant, Co. Cork, built a reputation for premium smoked salmon, crafted using traditional methods with no artificial additives. Initially serving local restaurants and shops, Geraldine expanded the business across Ireland, the UK, and internationally.

Recognising the power of online sales early on, she designed the company’s first website, boosting sales by 20% and reaching new markets. Corporate gifting became a major part of the business, with demand peaking at Christmas. Despite economic shifts, Old Millbank thrived, proving the enduring appeal of high-quality, traditionally smoked salmon.

The SmokeHouse

The smokehouse earned its reputation by using oak and beech wood to create a rich, natural flavor without artificial additives. Under Geraldine Bass’s leadership, it grew from supplying local restaurants and shops to serving customers across Ireland, the UK, and internationally.
In 2005, long term partner James Dillon became the first to introduce Old Millbank Salmon to Dublin, expanding its reach beyond Cork for the first time. With two decades of experience in the organic food industry, James took over the business in 2023, ensuring its legacy continues. Today, under Dillon Organics, their premium Atlantic salmon is expertly smoked in Goatsbridge, Co. Kilkenny, preserving the craftsmanship and authenticity that made Old Millbank a trusted name in Irish seafood.

James Dillon has been deeply involved in the organic food industry for over 20 years, driven by a passion for sustainable, high-quality produce. In 2005, he played a key role in expanding Old Millbank Salmon’s reach beyond Cork, becoming the first to introduce the brand to Dublin. As a longtime advocate for organic practices, he built strong connections within the industry, gaining extensive experience in sourcing, production, and distribution.
In 2023, James took over Old Millbank Smokehouse, ensuring its legacy continues under Dillon Organics. With his expertise and commitment to tradition, he has upheld the smokehouse’s reputation while enhancing its reach and sustainability.
